Description

Jamie Oliver’s Turkey Stuffing is a savory mix of breadcrumbs, sausage meat, fresh herbs, and aromatics. It’s either baked separately or stuffed into the turkey cavity to infuse flavor during roasting.


Ingredients

    • 2 tablespoons olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 200g (7 oz) breadcrumbs

    • 300g (10 oz) sausage meat

    • 1 small bunch fresh sage, finely chopped

    • 1 small bunch fresh parsley, finely chopped

    • Zest of 1 lemon

    • 1 egg, beaten

    • Salt and freshly ground black pepper to taste

Optional Add-Ins:

    • 100g (3.5 oz) dried cranberries

    • 50g (2 oz) toasted pine nuts or chopped walnuts

    • 1 apple, finely diced


Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil in a large pan over medium heat.

    • Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and fragrant. Remove from heat and let cool slightly.

Step 2: Mix the Stuffing

    • In a large mixing bowl, combine the breadcrumbs, sausage meat, sage, parsley, lemon zest, and the cooked onion and garlic mixture.

    • Add the beaten egg and mix thoroughly with your hands until everything is well combined. Season with salt and freshly ground black pepper.

Step 3: Add Optional Ingredients

    • If using cranberries, nuts, or diced apples, fold them into the stuffing mixture at this stage for added texture and flavor.

Step 4: Stuff the Turkey or Bake Separately

    • If stuffing the turkey: Loosely fill the turkey cavity with the stuffing mixture. Do not overpack, as the stuffing will expand during cooking.

    • If baking separately: Transfer the stuffing to a greased baking dish and bake in a preheated oven at 180°C (350°F) for 25-30 minutes, or until golden brown and cooked through.

Step 5: Serve and Enjoy

    • Slice and serve the stuffing alongside roasted turkey, gravy, and other festive sides.
