Description
Jamie Oliver’s Tiramisu Cake is a layered cake featuring sponge cake soaked in strong coffee, filled with a creamy mascarpone mixture, and dusted with cocoa powder. This version of tiramisu transforms the traditional dessert into a cake, offering an extra indulgent experience.

Instructions
Preheat your oven to 180°C (350°F). Grease and line two 20cm (8-inch) round cake tins with parchment paper.
In a large bowl, whisk the eggs and caster sugar together using an electric mixer until pale, thick, and fluffy (about 5-7 minutes). Gently fold in the sifted self-raising flour and a pinch of salt, taking care not to deflate the batter.
Divide the batter evenly between the prepared cake tins and smooth the tops. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
While the cakes are cooling, brew 300ml of strong coffee and let it cool to room temperature. If using, stir in the coffee liqueur for extra flavor.
In a large bowl, whisk the mascarpone cheese, double cream, icing sugar, and vanilla extract until smooth and creamy. Be careful not to overmix, as the mascarpone can become too thick.
Place one sponge cake layer on a serving plate. Using a pastry brush, generously soak the cake with the cooled coffee mixture, making sure it’s absorbed evenly. Spread half of the mascarpone filling over the soaked sponge. Place the second cake layer on top and repeat the soaking process with the remaining coffee. Spread the rest of the mascarpone filling over the top of the cake.
Dust the top of the tiramisu cake with a generous amount of cocoa powder. For an extra indulgent touch, sprinkle with dark chocolate shavings or curls.
Place the assembled tiramisu cake in the fridge to chill for at least 2 hours (or preferably overnight) to allow the flavors to meld together.
