  • 3 large sweet potatoes (peeled and cubed)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) chickpeas (drained and rinsed)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 4 cups vegetable stock
  • 1 bunch fresh coriander (for garnish)

Instructions

Step 1: Sauté the Onions and Garlic

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking for 3-4 minutes until softened and fragrant.

Step 2: Add the Sweet Potatoes and Spices

Add the cubed sweet potatoes to the pot, followed by the ground cumin and smoked paprika. Stir everything together to coat the sweet potatoes in the spices.

Step 3: Add Tomatoes and Stock

Pour in the chopped tomatoes and vegetable stock. Stir to combine, making sure the sweet potatoes are submerged in the liquid. Bring the mixture to a boil.

Step 4: Simmer the Stew

Reduce the heat to low, cover the pot, and let the stew simmer for 20-25 minutes, or until the sweet potatoes are tender.

Step 5: Add the Chickpeas

Once the sweet potatoes are cooked through, stir in the chickpeas. Let the stew simmer for an additional 5-7 minutes to allow the flavors to meld together.

Step 6: Garnish and Serve

Chop the fresh coriander and sprinkle it over the stew just before serving. Serve the sweet potato stew hot, with an optional squeeze of lemon for added brightness.
