Description

Jamie Oliver Stuffed chicken thighs are a dish where boneless chicken thighs are filled with a flavorful stuffing, then cooked to create a tender, juicy interior and a crispy, golden exterior. The stuffing can vary based on personal preferences, with popular fillings including herbs, garlic, cheese, and spinach.

  • 8 boneless, skin-on chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 100g soft cheese (like goat cheese or cream cheese)
  • 1 garlic clove, minced
  • 1 small bunch of fresh herbs (such as basil, parsley, or thyme), chopped
  • Zest of 1 lemon
  • 50g grated Parmesan cheese
  • Fresh lemon wedges, for serving
  • Fresh parsley, for garnish

Instructions

1. Preheat the Oven

    • Preheat your oven to 200°C (400°F).

2. Prepare the Stuffing

    • In a bowl, mix the soft cheese, minced garlic, chopped fresh herbs, lemon zest, and grated Parmesan. Season with salt and pepper to taste. Stir until well combined.

3. Stuff the Chicken Thighs

    • Lay each chicken thigh flat, skin side down. Spoon a small amount of the stuffing mixture onto each thigh, then carefully roll the thigh around the filling. Secure with toothpicks if needed to keep the stuffing in place.

4. Sear the Chicken Thighs

    • Heat olive oil in an oven-safe skillet over medium-high heat. Place the stuffed chicken thighs in the skillet, skin side down, and sear for 3-4 minutes until the skin is golden brown and crispy. Flip the thighs and cook for another 2 minutes.

5. Bake the Chicken Thighs

    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 75°C (165°F).

6. Serve

    • Remove the chicken thighs from the oven and let them rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side for extra flavor.
