  • 1 ciabatta loaf (or similar crusty bread)
  • 1 rib-eye or sirloin steak (about 250-300g)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 handful of fresh arugula (rocket)
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, peeled
  • 1 fresh chili (optional, for heat)

For the Quick Sauce:

  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon horseradish sauce (optional, for extra zing)

Instructions

1. Prepare the Steak

  • Season the steak generously on both sides with salt and freshly ground black pepper. Drizzle with olive oil and rub it into the meat to coat evenly.

2. Heat the Pan

  • Preheat a grill pan or frying pan over high heat until it’s very hot. Once hot, add the steak and cook for 2-3 minutes on each side for medium-rare, or adjust to your preferred doneness. Let the steak rest for a few minutes after cooking.

3. Prepare the Bread

  • While the steak is resting, slice the ciabatta loaf in half and toast it lightly in the grill pan until it’s golden and crispy. Rub one side of the toasted bread with the peeled garlic clove for added flavor.

4. Make the Quick Sauce

  • In a small bowl, mix together the mayonnaise, Dijon mustard, balsamic vinegar, and horseradish sauce. Adjust the flavors to your taste. Spread the sauce generously on the bottom half of the toasted ciabatta.

5. Assemble the Sandwich

  • Slice the steak thinly against the grain and arrange the slices over the sauce on the bread. Spread a thin layer of Dijon mustard on the top half of the bread.
  • Add a handful of fresh arugula on top of the steak and, if desired, scatter thinly sliced chili for a bit of heat.

6. Serve

  • Place the top half of the ciabatta on the sandwich. Cut into portions, if desired, and serve warm.
