  • 4 chicken thighs (skinless, bone-in or boneless)
  • 2 medium carrots, sliced
  • 2 celery sticks, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 400g potatoes, cubed
  • 150g button mushrooms, halved
  • 400g canned chopped tomatoes
  • 500ml chicken stock
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Vegetables

Begin by preparing all the vegetables. Slice the carrots, chop the celery, dice the onion, cube the potatoes, and halve the mushrooms. Mince the garlic.

Step 2: Layer Ingredients in the Slow Cooker

Place the prepared vegetables in the bottom of the slow cooker. Add the cubed potatoes and mushrooms on top of the other vegetables.

Step 3: Add Chicken and Seasonings

Place the chicken thighs on top of the vegetables in the slow cooker. Season with salt, pepper, dried thyme, and rosemary. Pour the canned tomatoes and chicken stock over the ingredients, then add the tomato paste. Gently stir to combine.

Step 4: Slow Cook the Casserole

Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through and the vegetables are soft.

Step 5: Serve

Once done, give the casserole a gentle stir to mix the flavors. Serve hot, garnished with fresh parsley. This casserole pairs well with crusty bread, mashed potatoes, or steamed rice.
