Description
Jamie Oliver Sausage rolls are a popular British pastry made with sausage meat encased in puff pastry and baked until golden and crispy. They are enjoyed hot or cold and are often served as snacks, party food, or a light meal.
Ingredients

- 500g sausage meat (beef or lamb) or good-quality sausages (removed from casings)

- 1 sheet of ready-made puff pastry (about 320g)

- 1 small onion, finely chopped

- 1 garlic clove, minced

- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

- 1 teaspoon Dijon or English mustard (optional, for extra flavor)

- Salt and freshly ground black pepper, to taste

- 1 egg, beaten (for egg wash)

- Sesame seeds or poppy seeds (optional, for topping)
Instructions
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
In a mixing bowl, combine the sausage meat, finely chopped onion, minced garlic, parsley, thyme, and mustard (if using). Season with salt and freshly ground black pepper. Mix everything thoroughly until all the ingredients are evenly distributed.
On a lightly floured surface, roll out the puff pastry into a large rectangle if it’s not pre-rolled. Cut the pastry into two long rectangles, each about 15cm wide.
Divide the sausage mixture in half and shape each half into a long sausage shape along one edge of each pastry rectangle, leaving a small border.
Brush the opposite edge of the pastry with a little beaten egg. Roll the pastry over the sausage filling, pressing the edges to seal. Place the rolls seam-side down on the baking tray.
Use a sharp knife to cut each long roll into smaller pieces, about 5cm each, or to your preferred size. Score the top of each roll lightly with a knife to allow steam to escape while baking.
Brush the tops of each sausage roll with the beaten egg for a golden finish. If desired, sprinkle sesame seeds or poppy seeds on top for extra texture.
Place the tray in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and crispy and the sausage filling is cooked through.
Allow the sausage rolls to cool for a few minutes before serving. Serve warm or at room temperature with your favorite dipping sauce, such as ketchup or mustard.
