Description

Jamie Oliver’s Sausage Carbonara is a flavorful twist on traditional carbonara. It includes pasta, sausages, eggs, Parmesan cheese, and garlic, creating a creamy and hearty dish that’s quick to prepare.

    • 300g dried spaghetti

    • 4 quality sausages (Italian sausages or similar)

    • 2 large eggs

    • 50g Parmesan cheese (grated)

    • 1 clove garlic (finely chopped)

    • 1 tablespoon olive oil

    • Fresh parsley (for garnish, optional)

    • Salt and pepper to taste


Instructions

Step 1: Cook the Spaghetti

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Drain, reserving about a cup of the pasta water.

Step 2: Prepare the Sausages

While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Remove the sausage meat from the casings and break it into small pieces. Add the sausage to the pan and cook for about 6-8 minutes, or until browned and cooked through. Add the chopped garlic during the last minute of cooking, and stir to combine.

Step 3: Make the Carbonara Sauce

In a small bowl, whisk the eggs and grated Parmesan cheese together until smooth. Season with a bit of salt and pepper.

Step 4: Combine the Pasta and Sausage

Once the pasta is cooked and drained, add it to the pan with the cooked sausage. Toss everything together over low heat. Remove the pan from the heat and slowly stir in the egg and Parmesan mixture, making sure to toss the pasta well to coat it in the sauce. Add a splash of the reserved pasta water if needed to make the sauce creamy and smooth.

Step 5: Serve

Divide the sausage carbonara between bowls and garnish with fresh parsley and an extra sprinkle of Parmesan, if desired. Serve immediately.
