Description

Jamie Oliver’s Sausage and Mash Pie is a comforting dish where a rich, sausage-filled gravy is topped with creamy mashed potatoes, and baked until golden and crispy on top. It’s the perfect mix of flavors and textures for a hearty, satisfying meal.

    • 6 good-quality sausages (such as Cumberland or Lincolnshire)

    • 1 large onion (chopped)

    • 2 garlic cloves (minced)

    • 2 tablespoons plain flour

    • 400ml beef or chicken stock

    • 1 tablespoon Worcestershire sauce

    • 2 teaspoons Dijon mustard

    • 1 tablespoon olive oil

    • 800g potatoes (peeled and chopped for mash)

    • 50g butter

    • 100ml milk

    • Salt and pepper to taste

    • Optional: Fresh parsley (for garnish)


Instructions

Step 1: Cook the Sausages

In a large frying pan, heat the olive oil over medium heat. Cook the sausages for 10-12 minutes until browned all over. Once cooked, remove the sausages from the pan and set aside to cool slightly, then slice them into chunks.

Step 2: Sauté the Onions and Garlic

In the same pan, add the chopped onions and sauté for 5-7 minutes until softened. Add the minced garlic and cook for another minute.

Step 3: Make the Gravy

Sprinkle the flour over the onions and garlic, stirring well to coat everything. Gradually pour in the stock, whisking to avoid lumps. Add the Worcestershire sauce and Dijon mustard, then stir and let the gravy simmer for 5-10 minutes, thickening slightly.

Step 4: Combine the Sausages and Gravy

Add the sliced sausages back into the pan with the gravy and stir to coat them. Let everything simmer together for a couple of minutes, then transfer the sausage mixture to a baking dish.

Step 5: Prepare the Mashed Potatoes

While the sausages are cooking, bring a large pot of salted water to a boil. Add the peeled and chopped potatoes and cook for about 10-12 minutes, or until tender. Drain the potatoes and mash them with the butter and milk. Season with salt and pepper to taste.

Step 6: Assemble the Pie

Preheat your oven to 200°C (400°F). Spread the mashed potatoes evenly over the sausage mixture in the baking dish. Use a fork to create a rough texture on the surface of the mash, which will help it crisp up in the oven.

Step 7: Bake the Pie

Bake the sausage and mash pie in the preheated oven for 20-25 minutes, or until the top is golden and crispy.

Step 8: Serve

Remove the pie from the oven and let it cool for a couple of minutes before serving. Garnish with fresh parsley, if desired, and enjoy!
