  • 500g (1 lb) salmon fillet, skinless and boneless
  • 1 sheet of ready-made puff pastry
  • 200g (7 oz) fresh spinach
  • 100g (1/3 cup) crème fraîche or cream cheese
  • 1 tablespoon Dijon mustard (optional)
  • 1 lemon, zest only
  • 1 clove garlic, minced
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Fresh dill or parsley (optional, for garnish)

Instructions

Step 1. Preheat the Oven

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper, ready for the salmon en croute.

Step 2. Prepare the Spinach Filling

In a pan, heat a little olive oil over medium heat and sauté the minced garlic for 1 minute. Add the fresh spinach and cook for 2-3 minutes until wilted. Drain any excess liquid from the spinach, then mix it with the crème fraîche (or cream cheese), lemon zest, salt, and pepper. Stir well to combine, then let the mixture cool slightly.

Step 3. Prepare the Salmon

Season the salmon fillet with salt and pepper on both sides. If using, spread a thin layer of Dijon mustard on top of the salmon for extra flavor.

Step 4. Assemble the Salmon en Croute

Roll out the puff pastry sheet on a lightly floured surface. Place the seasoned salmon fillet in the center of the pastry. Spread the spinach and crème fraîche mixture evenly on top of the salmon.

Fold the puff pastry over the salmon, tucking the edges underneath to fully encase the fish and seal in the filling. Use a fork to crimp the edges of the pastry for a secure seal. Cut a small slit on top of the pastry to allow steam to escape during baking.

Step 5. Egg Wash and Bake

Brush the entire pastry with the beaten egg to give it a golden, shiny finish. Transfer the salmon en croute to the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.

Step 6. Serve

Once baked, remove the salmon en croute from the oven and let it cool for a few minutes before slicing. Garnish with fresh dill or parsley, if desired, and serve with your favorite side dishes.
