Description

Jamie Oliver’s Roast Feta Pasta is a simple Mediterranean-inspired dish where feta cheese and cherry tomatoes are roasted until soft and creamy, then tossed with pasta to create a deliciously rich and tangy sauce.


Ingredients

    • 200g feta cheese block

    • 250g cherry tomatoes

    • 250g pasta (penne, spaghetti, or fusilli)

    • 3 tbsp olive oil

    • 2 cloves garlic, minced

    • 1 tsp dried oregano

    • ½ tsp chili flakes (optional)

    • Salt and black pepper to taste

    • Fresh basil leaves for garnish

    • Zest of 1 lemon (optional)


Instructions

Step 1: Preheat the Oven

    • Set the oven to 200°C (400°F) and line a baking dish with parchment paper.

Step 2: Roast the Feta and Tomatoes

    • Place the feta block in the center of the baking dish.

    • Surround it with cherry tomatoes and drizzle everything with olive oil.

    • Add minced garlic, oregano, chili flakes, salt, and black pepper.

    • Roast for 25 minutes, until the tomatoes are blistered and the feta is soft.

Step 3: Cook the Pasta

    • While the feta is roasting, cook the pasta in salted boiling water until al dente.

    • Reserve ½ cup of pasta water before draining.

Step 4: Mix Everything

    • Remove the feta and tomatoes from the oven.

    • Mash the feta and tomatoes with a fork to create a creamy sauce.

    • Toss in the cooked pasta, adding pasta water if needed for a silkier texture.

Step 5: Garnish and Serve

    • Sprinkle fresh basil and lemon zest over the pasta.

    • Serve immediately and enjoy!
