Jamie Oliver’s Roast Feta Pasta is a simple Mediterranean-inspired dish where feta cheese and cherry tomatoes are roasted until soft and creamy, then tossed with pasta to create a deliciously rich and tangy sauce.

- 200g feta cheese block

- 250g cherry tomatoes

- 250g pasta (penne, spaghetti, or fusilli)

- 3 tbsp olive oil

- 2 cloves garlic, minced

- 1 tsp dried oregano

- ½ tsp chili flakes (optional)

- Salt and black pepper to taste

- Fresh basil leaves for garnish

- Zest of 1 lemon (optional)
Instructions
Step 1: Preheat the Oven

- Set the oven to 200°C (400°F) and line a baking dish with parchment paper.
Step 2: Roast the Feta and Tomatoes

- Place the feta block in the center of the baking dish.

- Surround it with cherry tomatoes and drizzle everything with olive oil.

- Add minced garlic, oregano, chili flakes, salt, and black pepper.

- Roast for 25 minutes, until the tomatoes are blistered and the feta is soft.
Step 3: Cook the Pasta

- While the feta is roasting, cook the pasta in salted boiling water until al dente.

- Reserve ½ cup of pasta water before draining.
Step 4: Mix Everything

- Remove the feta and tomatoes from the oven.

- Mash the feta and tomatoes with a fork to create a creamy sauce.

- Toss in the cooked pasta, adding pasta water if needed for a silkier texture.
Step 5: Garnish and Serve

- Sprinkle fresh basil and lemon zest over the pasta.
