Jamie Oliver Peanut butter brownies are a rich chocolate brownie base, swirled with creamy peanut butter. The result is a decadent dessert with a gooey texture, where the sweetness of chocolate meets the salty richness of peanut butter in every bite.
Ingredients
- 200g dark chocolate (70% cocoa)
- 250g unsalted butter, cut into pieces
- 250g caster sugar
- 4 large eggs
- 150g plain flour
- 50g cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 150g smooth peanut butter
- Pinch of salt
Instructions
Preheat your oven to 180°C (350°F). Grease and line a 20cm square baking tin with parchment paper, allowing the paper to overhang slightly for easy removal.
In a heatproof bowl set over simmering water (double boiler), melt the dark chocolate and butter together, stirring occasionally until smooth. Once melted, remove the bowl from the heat and set aside to cool slightly.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and a pinch of salt. Stir to combine.
In a large mixing bowl, whisk the eggs and caster sugar together until pale and fluffy. Stir in the vanilla extract.
Slowly pour the melted chocolate and butter mixture into the beaten eggs and sugar, stirring continuously to combine. Fold in the sifted dry ingredients until just combined, being careful not to overmix.
Pour the brownie batter into the prepared baking tin, spreading it out evenly. Drop spoonfuls of peanut butter on top of the brownie mixture, then use a knife or skewer to swirl the peanut butter into the batter to create a marbled effect.
Bake in the preheated oven for 25-30 minutes, or until the brownies are set around the edges but still slightly gooey in the center. A toothpick inserted into the middle should come out with a few moist crumbs.
Remove the brownies from the oven and let them cool completely in the tin. Once cool, lift them out using the parchment paper overhang, and slice into squares.
