Description

Jamie Oliver’s Pasta Sauce is a flavorful tomato-based sauce made with simple ingredients like onions, garlic, and tomatoes, simmered together with herbs and spices. It’s a classic Italian-inspired sauce that is easy to prepare and can be used as a base for many pasta dishes, pizzas, or as a dip for breadsticks.

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cans (800g) whole peeled tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 pinch of sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

Step 1. Sauté the Onion and Garlic

Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and sauté for 5-7 minutes until soft and translucent. Add the minced garlic and cook for another 1-2 minutes, stirring to avoid burning.

Step 2. Add the Tomatoes and Tomato Paste

Pour the canned whole tomatoes into the pan, breaking them up with a wooden spoon as they cook. Stir in the tomato paste, which helps to thicken the sauce and add depth of flavor.

Step 3. Add the Herbs and Seasonings

Stir in the dried oregano and basil, and add a pinch of sugar to balance the acidity of the tomatoes (optional). Season with salt and pepper to taste.

Step 4. Simmer the Sauce

Reduce the heat to low and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken. If you prefer a smoother sauce, use an immersion blender to blend the sauce to your desired consistency.

Step 5. Adjust Seasoning and Serve

Taste the sauce and adjust seasoning if necessary. If the sauce is too thick, you can add a splash of water or stock to loosen it up. Serve the sauce tossed with your favorite pasta, and garnish with fresh basil leaves and grated Parmesan cheese if desired.
