Description

Jamie Oliver Parsnip and Apple Soup is a creamy soup made from cooked parsnips and apples blended together with broth and spices. This dish combines the earthy sweetness of parsnips with the bright acidity of apples, creating a comforting and flavorful soup that’s perfect for any season.

    • 500g parsnips, peeled and chopped

    • 1 large onion, chopped

    • 2 apples (such as Granny Smith or Cox), peeled, cored, and chopped

    • 2 tablespoons olive oil

    • 1-liter vegetable or chicken stock

    • 1 teaspoon ground cumin (optional)

    • Salt and freshly ground black pepper, to taste

    • Fresh parsley or chives, for garnish

    • A splash of cream or coconut milk (optional, for a richer soup)


Instructions

1. Prepare the Vegetables

    • Peel and chop the parsnips, onion, and apples. Make sure to chop them into similar-sized pieces for even cooking.

2. Sauté the Onions

    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.

3. Add Parsnips and Apples

    • Stir in the chopped parsnips and apples, cooking for another 5 minutes to lightly soften them.

4. Season and Add Stock

    • If using, sprinkle in the ground cumin, salt, and freshly ground black pepper. Pour in the vegetable or chicken stock, bringing the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, or until the parsnips and apples are tender.

5. Blend the Soup

    • Once cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup to a countertop blender in batches. If desired, add a splash of cream or coconut milk for a richer texture and blend again.

6. Taste and Adjust Seasoning

    • Taste the soup and adjust the seasoning with more salt and pepper if needed.

7. Serve

    • Ladle the soup into bowls and garnish with freshly chopped parsley or chives. Serve warm with crusty bread.
