Instructions
1. Prepare the Vegetables

- Peel and chop the parsnips, onion, and apples. Make sure to chop them into similar-sized pieces for even cooking.
2. Sauté the Onions

- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
3. Add Parsnips and Apples

- Stir in the chopped parsnips and apples, cooking for another 5 minutes to lightly soften them.
4. Season and Add Stock

- If using, sprinkle in the ground cumin, salt, and freshly ground black pepper. Pour in the vegetable or chicken stock, bringing the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, or until the parsnips and apples are tender.
5. Blend the Soup

- Once cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup to a countertop blender in batches. If desired, add a splash of cream or coconut milk for a richer texture and blend again.
