  • 500g (1 lb) boneless, skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon chili powder (optional, for heat)
  • 1 lime, juiced
  • 8 small flour or corn tortillas
  • 1 avocado, sliced
  • 100g (1 cup) cherry tomatoes, quartered
  • 1 small red onion, finely chopped
  • Fresh cilantro (coriander), chopped
  • Sour cream or Greek yogurt (optional, for serving)
  • Salt and pepper to taste

Instructions

Step 1. Marinate the Chicken

In a large bowl, combine the smoked paprika, ground cumin, ground coriander, chili powder (if using), lime juice, olive oil, salt, and pepper. Add the sliced chicken breasts and toss to coat evenly with the marinade. Let the chicken marinate for 10-15 minutes to absorb the flavors.

Step 2. Cook the Chicken

Heat a large pan or skillet over medium heat. Once hot, add the marinated chicken slices to the pan and cook for 6-8 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.

Step 3. Prepare the Toppings

While the chicken is cooking, prepare the toppings. Slice the avocado, quarter the cherry tomatoes, finely chop the red onion and roughly chop the fresh cilantro. Set all the toppings aside, ready to assemble the tacos.

Step 4. Warm the Tortillas

Heat the tortillas in a dry pan over medium heat for about 30 seconds on each side, or until they are warmed through and slightly toasted. Alternatively, you can wrap the tortillas in foil and warm them in the oven at 180°C (350°F) for 5 minutes.

Step 5. Assemble the Tacos

To assemble the tacos, place a few slices of the cooked chicken onto each warm tortilla. Top with avocado slices, cherry tomatoes, red onion, and fresh cilantro. Drizzle with a little lime juice for extra zing. If you like, add a dollop of sour cream or Greek yogurt for creaminess.

Step 6. Serve

Serve the tacos immediately, allowing everyone to customize their own tacos with their favorite toppings. Enjoy with a side of salsa, guacamole, or a fresh salad.
