    • 1 can (400g) chickpeas, drained and rinsed

    • 200g green beans, trimmed and blanched

    • 1 small red onion, finely chopped

    • 1 red bell pepper, diced

    • 1 small cucumber, diced

    • 3 tablespoons olive oil

    • 2 tablespoons red wine vinegar

    • 1 teaspoon Dijon mustard

    • 1 garlic clove, minced

    • Salt and pepper to taste

    • Fresh parsley or cilantro, chopped


Instructions

Step 1: Prepare the Green Beans

    1. Blanch the Green Beans: Bring a pot of water to a boil. Add the green beans and cook for 3-4 minutes until tender-crisp. Drain and immediately transfer to a bowl of ice water to cool. Drain and set aside.
