Jamie Oliver’s Three Bean Salad is a colorful and nutritious dish made with a mix of three different types of beans, usually kidney beans, chickpeas, and green beans, tossed in a zesty vinaigrette with fresh vegetables and herbs.   • 200g broad beans (fava beans), shelled
  • 200g sugar snap peas, trimmed
  • 1 small red onion, thinly sliced
  • 1 handful cherry tomatoes, halved
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Parmesan shavings (optional, for garnish)

Instructions

Step 1: Prepare the Green Beans

    1. Blanch the Green Beans: Bring a pot of water to a boil. Add the green beans and cook for 3-4 minutes until tender-crisp. Drain and immediately transfer to a bowl of ice water to cool. Drain and set aside.

Step 2: Prepare the Vegetables

    1. Chop the Vegetables: Finely chop the red onion, dice the red bell pepper, and cucumber. Add them to a large mixing bowl.

Step 3: Combine the Beans

    1. Add the Beans: Add the drained kidney beans, chickpeas, and blanched green beans to the mixing bowl with the vegetables.

Step 4: Make the Dressing

    1. Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

Step 5: Assemble the Salad
