Description

Jamie Oliver’s Chilli Sauce is a spicy condiment made from a blend of fresh chilies, garlic, vinegar, and sugar. It’s designed to add heat and flavor to a wide range of dishes, from grilled meats to stir-fries.


Ingredients

    • Fresh Red Chilies: 6-8, depending on your heat preference

    • Garlic: 4 cloves, peeled and chopped

    • Red Wine Vinegar: 100ml (about 1/2 cup)

    • Sugar: 2 tablespoons

    • Salt: A pinch

    • Olive Oil: 2 tablespoons

    • Water: 100ml (about 1/2 cup)


Instructions

Step 1: Prepare the Chilies

    • Chop the Chilies: Start by chopping the fresh chilies into small pieces. For a milder sauce, remove the seeds before chopping. For more heat, keep the seeds in.

Step 2: Cook the Sauce

    • Sauté the Garlic: In a medium saucepan, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    • Add the Chilies: Stir in the chopped chilies and cook for another 2-3 minutes, allowing them to soften slightly.

Step 3: Simmer with Vinegar and Sugar

    • Add Vinegar and Sugar: Pour in the red wine vinegar and add the sugar. Stir well to combine the ingredients.

    • Simmer the Sauce: Add the water and bring the mixture to a simmer. Reduce the heat to low and let it simmer gently for 10-15 minutes, allowing the flavors to meld together.

Step 4: Blend the Sauce

    • Blend Until Smooth: Remove the saucepan from the heat and let the mixture cool slightly. Transfer the mixture to a blender and blend until smooth. If you prefer a chunkier sauce, blend less or pulse until you reach your desired consistency.

Step 5: Season and Adjust

    • Season with Salt: Taste the sauce and add salt to your liking. Adjust the seasoning with more vinegar or sugar if necessary.
