Ingredients

    • Chicken Thighs (skinless, boneless): 400g (14 oz), sliced

    • Coconut Milk: 400ml (about 1 can)

    • Rice Noodles: 200g (7 oz)

    • Chicken Stock: 500ml (2 cups)

    • Lemongrass: 2 stalks, bashed and chopped

    • Ginger: 1-inch piece, grated

    • Garlic: 3 cloves, minced

    • Shallots: 2, finely chopped

    • Turmeric Powder: 1 teaspoon

    • Coriander Seeds (or powder): 1 teaspoon, crushed

    • Chili Paste: 1 tablespoon (adjust for heat preference)

    • Fish Sauce: 2 tablespoons

    • Lime Juice: 2 tablespoons (or from 1 lime)

    • Fresh Coriander (Cilantro): A handful, chopped

    • Bean Sprouts: 1 cup

    • Red Chili (optional): Sliced, for garnish

    • Olive Oil or Vegetable Oil: 2 tablespoons


Instructions

Step 1: Prepare the Laksa Base

    • Heat the Oil: In a large pot, heat the oil over medium heat.

    • Cook the Aromatics: Add the minced garlic, chopped shallots, grated ginger, lemongrass, coriander seeds, and turmeric. Cook for 2-3 minutes until fragrant, being careful not to burn the garlic.

Step 2: Cook the Chicken

    • Add the Chicken: Stir in the sliced chicken thighs and cook for 5-7 minutes until browned on all sides.

Step 3: Make the Laksa Broth

    • Add the Coconut Milk and Stock: Pour in the coconut milk and chicken stock, stirring to combine.

    • Add Chili Paste and Fish Sauce: Stir in the chili paste and fish sauce. Bring the soup to a gentle simmer.

    • Simmer: Let the soup simmer for 20-25 minutes, allowing the flavors to meld and the chicken to cook through.

Step 4: Cook the Noodles

    • Prepare the Noodles: While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
