Description

Jamie Oliver’s Carrot and Orange Salad is a simple yet flavorful salad that features thinly sliced or grated carrots, fresh orange segments, and a light, tangy dressing. The salad is often garnished with fresh herbs and a sprinkle of seeds or nuts for added texture and flavor.

Ingredients

  • 4 large carrots, peeled and grated or julienned
  • 2 large oranges, peeled and segmented
  • 1 small red onion, thinly sliced (optional)
  • 1 handful of fresh mint or parsley leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice or white wine vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste
  • 1 tablespoon toasted sunflower seeds or chopped nuts (optional, for garnish)

Instructions

Step 1: Prepare the Carrots

    1. Grate or Julienne the Carrots: Start by peeling the carrots, then grate them or slice them into thin julienne strips. Place the prepared carrots in a large salad bowl.

Step 2: Prepare the Oranges

    • Segment the Oranges: Peel the oranges, removing as much of the white pith as possible. Cut the oranges into segments and add them to the bowl with the carrots.

Step 3: Prepare the Dressing

    • Mix the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice (or white wine vinegar), honey (if using), salt, and pepper until well combined.

Step 4: Assemble the Salad

    • Combine the Ingredients: Pour the dressing over the carrots and orange segments. Toss gently to coat the ingredients evenly.

    • Add the Herbs and Garnish: Sprinkle the salad with chopped fresh mint or parsley, and top with toasted sunflower seeds or chopped nuts if desired.

Step 5: Serve

    • Serve Immediately: Serve the salad immediately, or let it sit for a few minutes to allow the flavors to meld together.
