Ingredients

    • Lamb Shanks: 4 large lamb shanks

    • Garlic Bulbs: 2, halved horizontally

    • Fresh Rosemary: 4 sprigs

    • Red Wine: 750ml (about 1 bottle)

    • Canned Tomatoes (diced): 400g (about 14 oz)


Instructions

Step 1: Preheat the Oven

    • Set the Oven Temperature: Preheat your oven to 160°C (320°F).

Step 2: Brown the Lamb Shanks

    • Brown the Lamb Shanks: In a large ovenproof pan or Dutch oven, heat a drizzle of olive oil over medium heat. Brown the lamb shanks on all sides for about 10 minutes until they are golden and sealed.

    • Remove the Shanks: Once browned, remove the lamb shanks from the pan and set them aside.

Step 3: Prepare the Base

    • Add the Garlic and Rosemary: In the same pan, add the halved garlic bulbs (cut side down) and fresh rosemary sprigs. Cook for 1-2 minutes until fragrant.

Step 4: Add the Wine and Tomatoes

    • Pour in the Red Wine: Add the bottle of red wine, scraping up any bits from the bottom of the pan to deglaze.

    • Add the Tomatoes: Stir in the diced tomatoes, mixing well with the wine and garlic.

Step 5: Cook the Lamb Shanks

    • Return the Lamb Shanks to the Pan: Place the browned lamb shanks back into the pan, ensuring they are submerged in the sauce.

    • Cover and Cook: Cover the pan with a lid or tightly with aluminum foil and place it in the preheated oven. Cook for 2.5-3 hours, or until the lamb shanks are fall-apart tender.

Step 6: Serve

    • Serve Hot: Remove the lamb shanks from the oven and allow them to rest for a few minutes. Serve with the rich tomato and wine sauce spooned over the top.
