Jamie Oliver’s 5 Ingredients Lamb Curry is a simple curry that uses lamb, curry paste, onions, tomatoes, and yogurt. The lamb is slow-cooked with these ingredients, resulting in a rich and flavorful curry that’s perfect for serving over rice or with naan bread.


Ingredients

    • Lamb Shoulder (boneless): 600g (about 1.3 lbs), cut into chunks

    • Curry Paste: 4 tablespoons (choose your favorite type)

    • Onions: 2 large, sliced

    • Canned Tomatoes (diced): 400g (about 14 oz)

    • Plain Yogurt: 200ml (about 3/4 cup)


Instructions

Step 1: Sauté the Onions

    • Heat a Pan: Place a large pan over medium heat and add a drizzle of oil.

    • Cook the Onions: Add the sliced onions and cook for 5-7 minutes until softened and golden.

Step 2: Add the Curry Paste

    • Stir in the Curry Paste: Add the curry paste to the onions and stir well to coat. Cook for 2-3 minutes to release the flavors of the spices.

Step 3: Cook the Lamb

    • Add the Lamb: Stir in the lamb chunks, making sure they’re coated in the curry paste and onions.

    • Brown the Meat: Cook the lamb for 5-6 minutes until browned on all sides.

Step 4: Add Tomatoes and Simmer

    • Add the Canned Tomatoes: Pour in the canned diced tomatoes and stir everything together.

    • Simmer the Curry: Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let the curry simmer for 1.5-2 hours, or until the lamb is tender and the sauce has thickened.

Step 5: Stir in the Yogurt

    • Add the Yogurt: Once the lamb is tender, remove the pan from the heat and stir in the yogurt for a creamy finish.
