Jamie Oliver’s 5 Ingredients Carrot Pomegranate Salad is a simple yet flavorful salad made with fresh carrots, pomegranate seeds, and a few other key ingredients, creating a refreshing and healthy dish.

  • 4 large carrots
  • 1 pomegranate
  • A handful of fresh mint leaves
  • 1 lemon
  • 2 tablespoons of extra virgin olive oil

Instructions

1. Prepare the Carrots
Begin by peeling the carrots. Once peeled, use a julienne peeler or a sharp knife to cut the carrots into thin, matchstick-sized strips. Place them in a large salad bowl.

2. Extract the Pomegranate Seeds
Cut the pomegranate in half. Over a bowl, hold the pomegranate cut side down and tap the back with a spoon to release the seeds. Be sure to remove any white pith that may fall into the bowl. Add the pomegranate seeds to the carrots.

3. Add the Fresh Mint
Roughly chop the fresh mint leaves and sprinkle them over the carrot and pomegranate mixture.

4. Dress the Salad
Squeeze the juice of one lemon over the salad. Drizzle with the extra virgin olive oil and toss everything together until well combined.

5. Serve Immediately
Once everything is well mixed, your salad is ready to serve. Enjoy it fresh to fully appreciate the bright flavors.
