    • 250g gluten-free self-raising flour (plus extra for dusting)

    • 1 teaspoon baking powder

    • 50g unsalted butter, cold and cubed

    • 2 tablespoons caster sugar

    • 150ml whole milk

    • 1 large egg (for egg wash)

    • A pinch of salt

    • Optional: 50g sultanas or dried fruit (for variation)


Instructions

1. Preheat the Oven

Preheat your oven to 220°C (425°F). Line a baking tray with parchment paper.

2. Mix the Dry Ingredients

In a large mixing bowl, combine the gluten-free self-raising flour, baking powder, caster sugar, and a pinch of salt. Stir to ensure the ingredients are evenly mixed.

3. Rub in the Butter

Add the cold cubed butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs. Work quickly to avoid melting the butter with your hands.

4. Add the Milk

Make a well in the center of the mixture and gradually add the milk, mixing with a knife or spatula until the dough just comes together. Be careful not to overmix as you want a soft dough.

5. Optional: Add Dried Fruit

If you’re adding dried fruit like sultanas or raisins, fold them into the dough at this stage.

6. Shape the Dough

Lightly flour your work surface with gluten-free flour. Turn the dough out onto the surface and gently pat it into a round shape, about 2-3 cm thick.

7. Cut Out the Scones

Using a round cookie cutter (or a glass), cut out rounds of dough. Place the scones onto the lined baking tray, leaving space between each one. Gently gather any remaining dough, reshape, and cut out more scones.

8. Brush with Egg Wash

Beat the egg in a small bowl. Brush the tops of the scones with the beaten egg for a golden, shiny finish.

9. Bake the Scones

Place the scones in the preheated oven and bake for 12-15 minutes, or until the tops are golden brown and the scones have risen well.

10. Serve

Once baked, remove the scones from the oven and let them cool slightly on a wire rack. Serve warm with your favorite toppings such as clotted cream and jam or butter.
