Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract (if using) until smooth and well blended.
Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Be careful not to overmix—some lumps are okay as this helps keep the pancakes fluffy.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter.
Pour ¼ cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until golden brown.
Stack the pancakes on a plate and serve warm with your favorite toppings like maple syrup, fresh berries, or whipped cream.
