For the Fish Filling:

- 200g smoked fish (optional, such as smoked haddock)

- 4 black peppercorns
For the White Sauce:

- 50g butter

- 50g plain flour

- Salt and freshly ground black pepper

- 1 teaspoon Dijon mustard

- 100g fresh spinach (optional)

- 2 hard-boiled eggs, chopped (optional)

- Fresh parsley, chopped, for garnish
For the Mashed Potato Topping:

- 1 kg potatoes, peeled and chopped

- 50g butter

- 100ml milk or cream

- Salt and freshly ground black pepper
Instructions
1. Cook the Fish

- Place the mixed fish, smoked fish, bay leaf, halved onion, and peppercorns in a large saucepan. Pour over the milk and bring to a gentle simmer. Poach the fish for about 5-7 minutes until it’s just cooked through. Remove the fish with a slotted spoon and set it aside, reserving the milk for the sauce.
2. Make the White Sauce

- In a separate saucepan, melt the butter over medium heat. Stir in the flour to make a roux, cooking for 1-2 minutes. Gradually whisk in the reserved milk from the fish poaching until you have a smooth, creamy sauce. Add salt, pepper, and Dijon mustard, and stir well.
3. Add the Fish and Optional Ingredients

- Flake the poached fish into bite-sized pieces and add it to the sauce. Stir in the fresh spinach and chopped hard-boiled eggs if using, mixing gently to combine.
4. Prepare the Mashed Potato Topping

- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk (or cream), salt, and pepper until smooth and creamy.
5. Assemble the Fish Pie

- Preheat your oven to 200°C (400°F). Spoon the fish and sauce mixture into a large baking dish. Spread the mashed potatoes evenly on top, using a fork to create a textured surface, which will turn golden and crispy in the oven.
6. Bake the Fish Pie

- Bake the fish pie in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling around the edges.
7. Garnish and Serve

- Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley and serve warm.
