Jamie Oliver’s Crispy Lamb Fajitas are a flavorful and quick-to-make dish that combines crispy lamb with fresh vegetables, smoky spices, and warm tortillas. The lamb is seasoned and cooked until perfectly crispy, then served with a variety of toppings, such as guacamole, sour cream, salsa, and fresh herbs. This dish is perfect for a casual, tasty meal that delivers big on flavor.
Ingredients
- 500g (1 lb) lamb shoulder or leg, thinly sliced or shredded
- 1 tablespoon olive oil
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon ground coriander
- 1 teaspoon chili powder (optional, for heat)
- 1 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 lime, zest and juice
- Salt and pepper to taste
- 8 small flour or corn tortillas, warmed
- Fresh cilantro (coriander) leaves, for garnish

- Shredded lettuce
- Grated cheese
- Fresh jalapeños
Instructions
Heat a large frying pan over medium-high heat and add the olive oil. Season the lamb with cumin, smoked paprika, ground coriander, chili powder (if using), salt, and pepper. Add the seasoned lamb to the hot pan and cook for 6-8 minutes, stirring occasionally, until the lamb is crispy and browned. Remove the lamb from the pan and set aside.
In the same pan, add the sliced red onion and bell peppers. Cook for 3-4 minutes until they begin to soften and take on some color. Add the minced garlic and cook for another minute until fragrant.
Return the crispy lamb to the pan with the cooked vegetables. Add the zest and juice of one lime, and stir everything together to combine. Cook for another 2-3 minutes to allow the flavors to meld. Taste and adjust the seasoning with more salt, pepper, or lime juice if needed.
While the lamb is finishing cooking, warm the tortillas in a dry pan over medium heat for about 30 seconds on each side, or until they are pliable and slightly toasted. Alternatively, you can warm the tortillas in the oven by wrapping them in foil and heating them at 180°C (350°F) for 5 minutes.
To assemble the fajitas, place a portion of the crispy lamb and vegetable mixture in the center of each warm tortilla. Add your choice of toppings such as guacamole, sour cream, salsa, shredded lettuce, and grated cheese. Garnish with fresh cilantro leaves for extra flavor.
Serve the fajitas immediately, allowing everyone to customize their own with their favorite toppings. Squeeze a little extra lime juice on top for a zesty finish, and enjoy!
