Jamie Oliver’s Chorizo and Butterbean Stew is a delicious one-pot dish that combines the smoky, spicy flavors of chorizo with the creamy texture of butterbeans, all cooked together in a rich tomato-based sauce.     • 200g (7 oz) chorizo, sliced

    • 1 onion, finely chopped

    • 2 cloves garlic, minced

    • 1 can (400g/14 oz) butterbeans, drained and rinsed

    • 1 can (400g/14 oz) chopped tomatoes

    • 1 tablespoon olive oil

    • 1 teaspoon smoked paprika

    • 1 teaspoon ground cumin (optional)

    • Fresh parsley, chopped (for garnish)

    • Salt and pepper to taste


Instructions

Step 1. Prepare the Chorizo

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sliced chorizo and cook for 3-4 minutes until the chorizo releases its oils and starts to become crispy. This will infuse the oil with a smoky, rich flavor that forms the base of the stew.

Step 2. Cook the Onion and Garlic

Once the chorizo is crispy, add the chopped onion to the pot. Cook for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent. Add the minced garlic and cook for another minute, stirring constantly to avoid burning the garlic.

Step 3. Add the Spices

Stir in the smoked paprika and cumin (if using) into the onion and garlic mixture. Cook the spices for 1-2 minutes to release their aromas and deepen the flavor.

Step 4. Add the Tomatoes and Butterbeans

Pour in the can of chopped tomatoes and stir to combine. Then, add the drained and rinsed butterbeans. Season with salt and pepper to taste. Bring the stew to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together.

Step 5. Adjust Seasoning and Serve

Once the stew has thickened slightly and the flavors have developed, taste and adjust the seasoning with more salt, pepper, or paprika as needed. Remove from heat and garnish with freshly chopped parsley for a burst of freshness.

Step 6. Serve
