  • 1 large onion, finely chopped

  • 500g minced beef
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (400g) diced tomatoes
  • 1 can (400g) kidney beans, drained and rinsed
  • 1 cup beef broth or water
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sour cream, grated cheese, sliced green onions

Instructions

Step 1: Sauté the Aromatics

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper. Cook for 5-6 minutes, stirring occasionally, until softened and fragrant.

Step 2: Brown the Beef

Add the minced beef to the pot, breaking it up with a wooden spoon. Cook until the beef is browned all over, about 5-7 minutes.

Step 3: Add the Spices

Stir in the ground cumin, ground coriander, smoked paprika, and chili powder. Cook for 1-2 minutes, allowing the spices to toast slightly and release their aroma.

Step 4: Add the Tomatoes and Broth

Pour in the diced tomatoes and beef broth. Stir everything together, making sure the beef is fully coated. Season with salt and pepper.

Step 5: Simmer the Chilli

Bring the mixture to a gentle simmer. Cover the pot partially and let it cook on low heat for 30-40 minutes, stirring occasionally, until the flavors meld and the sauce thickens. If it looks too dry, add a bit more broth or water.

Step 6: Add the Beans

Stir in the kidney beans and cook for an additional 10 minutes, allowing the beans to heat through and absorb the flavors.

Step 7: Serve

Serve the chilli con carne hot, garnished with fresh cilantro. Add optional toppings like sour cream, grated cheese, or green onions for extra flavor. Pair with rice, tortillas, or crusty bread.
