Instructions
Step 1: Prepare the Chicken

- Season the chicken: Season the chicken thighs with salt and pepper. Heat the olive oil in a large, deep pan or tagine over medium heat.

- Brown the chicken: Add the chicken thighs to the pan and brown them on both sides, about 5-7 minutes per side. Once browned, remove the chicken and set it aside.
Step 2: Cook the Aromatics

- Sauté the onions and garlic: In the same pan, add the sliced onions, garlic, and ginger. Sauté for 5-7 minutes until the onions are softened and fragrant.

- Add the spices: Stir in the ground cumin, coriander, cinnamon, turmeric, and saffron (if using). Cook for 1-2 minutes, allowing the spices to release their aromas.
Step 3: Add the Chicken and Liquids

- Return the chicken to the pan: Add the browned chicken back into the pan with the onions and spices.

- Add the preserved lemons and apricots: Stir in the preserved lemons and dried apricots, mixing them evenly with the chicken.

- Add the chicken stock: Pour the chicken stock over the mixture, bringing it to a gentle simmer.
Step 4: Slow Cook the Tagine

- Cover and simmer: Reduce the heat to low, cover the pan, and let the chicken simmer gently for 45 minutes to 1 hour, or until the chicken is cooked through and tender.
