Jamie Oliver Chicken gravy is a sauce made from the drippings left after roasting chicken, combined with vegetables, herbs, and flour to thicken. It’s traditionally served over chicken, mashed potatoes, or vegetables, adding a rich, savory flavor to the meal.

- Drippings and juices from a roasted chicken

- 1 onion, roughly chopped

- 1 carrot, roughly chopped

- 1 celery stalk, roughly chopped

- 1 tablespoon plain flour

- 500ml chicken stock (homemade or low-sodium store-bought)

- A few sprigs of fresh thyme or rosemary (optional)

- Salt and freshly ground black pepper, to taste
Instructions
1. Collect the Drippings

- Once the chicken is roasted, remove it from the roasting pan and set it aside to rest. Leave the pan juices and drippings in the pan; these will be the base for your gravy.
2. Add Vegetables and Herbs

- Place the roasting pan on the stovetop over medium heat. Add the chopped onion, carrot, and celery, along with any fresh herbs like thyme or rosemary if desired. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.
3. Stir in the Flour

- Sprinkle the flour over the vegetables and drippings in the pan. Stir continuously for about 1-2 minutes to cook out the raw flour taste, creating a roux that will thicken the gravy.
4. Add the Stock

- Gradually pour in the chicken stock, stirring constantly to prevent lumps. Scrape any browned bits from the bottom of the pan for extra flavor. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes until thickened to your desired consistency.
5. Strain the Gravy

- Once the gravy has thickened, strain it through a fine-mesh sieve into a clean bowl or saucepan to remove the vegetables and herbs. Press down on the solids with the back of a spoon to extract as much liquid and flavor as possible.
6. Season and Serve

- Taste the gravy and season with salt and freshly ground black pepper as needed. Pour the gravy into a serving dish or directly over the chicken and enjoy!
