Ingredients
- 2 cups cooked chicken (shredded)
- 1 can (400g) sweetcorn (drained)
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 1 thumb-sized piece of ginger (grated)
- 1 liter chicken stock
- 2 tablespoons soy sauce
- 2 spring onions (chopped, for garnish)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and grated ginger, cooking for 3-4 minutes until softened and fragrant. Stir occasionally to avoid burning the garlic.
Add the drained sweetcorn to the pot and cook for 2-3 minutes, stirring occasionally. The sweetcorn will start to soften and absorb the flavors from the garlic and ginger.
Pour in the chicken stock and soy sauce, stirring everything together. Bring the mixture to a gentle simmer, then add the shredded chicken to the pot. Let the soup simmer for 10 minutes, allowing the flavors to meld together and the chicken to heat through.
Taste the soup and season with salt and pepper as needed. If you want a stronger flavor, you can add more soy sauce or a dash of hot sauce for some heat.
Ladle the soup into bowls and garnish with chopped spring onions for a fresh burst of flavor. Serve hot and enjoy!
