Description

    • 1 onion, finely chopped

    • 1 garlic clove, minced

    • 100g (3.5 oz) cooked and peeled chestnuts, roughly chopped

    • 1 tablespoon plain flour

    • 500ml (2 cups) chicken, turkey, or vegetable stock

    • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

    • Salt and freshly ground black pepper to taste

    • 1 tablespoon cream or butter (optional, for richness)


Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil or butter in a large pan over medium heat.

    • Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and lightly caramelized.

Step 2: Add the Chestnuts and Flour

    • Stir in the chopped chestnuts and cook for 2 minutes. Sprinkle the flour over the mixture and stir well to coat the chestnuts and onions evenly.

Step 3: Add the Stock and Simmer

    • Gradually pour in the stock while stirring to avoid lumps. Add the thyme leaves and bring the mixture to a gentle simmer. Cook for 10-15 minutes until the gravy thickens.

Step 4: Blend for a Smooth Texture (Optional)

    • For a smoother gravy, use an immersion blender to blend the mixture until creamy. Alternatively, leave it chunky for a more rustic texture.

Step 5: Season and Finish

    • Season with salt and freshly ground black pepper. Stir in cream or butter for added richness if desired.

Step 6: Serve and Enjoy
