Jamie Oliver’s Celery Soup is a simple and creamy soup made with fresh celery, onions, potatoes, and broth. Blended until smooth, this soup is seasoned with herbs and spices for a fresh, vibrant flavor. It’s an easy, comforting dish that’s perfect for a quick meal.

- 1 large bunch of celery (about 8–10 stalks, chopped)

- 1-liter vegetable or chicken stock

- Salt and pepper to taste

- Fresh parsley or celery leaves (for garnish)

- Optional: A splash of cream for extra richness
Instructions
Wash and chop the celery stalks into small pieces. Peel and dice the potatoes, chop the onion, and mince the garlic.
In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes, until softened and fragrant. Add the chopped celery and potatoes to the pot and cook for an additional 5 minutes, stirring occasionally.
Pour the vegetable or chicken stock into the pot, making sure the vegetables are fully covered. Bring the soup to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes and celery are tender.
Once the vegetables are fully cooked, remove the pot from the heat. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
Season the soup with salt and pepper to taste. If you want a richer texture, stir in a splash of cream at this point. Adjust the consistency by adding more stock or water if needed.
Ladle the celery soup into bowls and garnish with fresh parsley or celery leaves. Serve hot with crusty bread or a simple salad on the side.
