Description

Jamie Oliver’s Carrot and Courgette Soup is a smooth and creamy soup made by simmering fresh carrots and courgettes with herbs and spices, then blending them into a velvety consistency. It’s a nutritious, wholesome meal that’s both simple and delicious, perfect for any time of the year.


Ingredients

    • 1 tablespoon olive oil

    • 1 large onion, chopped

    • 2 cloves garlic, minced

    • 4 large carrots, peeled and chopped

    • 2 medium courgettes (zucchini), chopped

    • 1 liter (4 cups) vegetable or chicken stock

    • 1 teaspoon dried thyme or fresh thyme sprigs

    • Salt and pepper to taste

    • Fresh parsley or chives for garnish

    • 100ml (1/2 cup) cream (optional)


Instructions

1. Sauté the Onions and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

2. Add the Carrots and Courgettes

Stir in the chopped carrots and courgettes, making sure to coat them in the oil. Cook for 5 minutes, allowing the vegetables to start softening.

3. Add the Stock and Seasonings

Pour in the vegetable or chicken stock and add the dried thyme. Stir to combine. Bring the mixture to a boil, then reduce the heat to low. Let the soup simmer for 20-25 minutes, or until the carrots and courgettes are tender.

4. Blend the Soup

Remove the soup from the heat and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender and blend in batches until smooth.

5. Add Cream (Optional)

For a creamier texture, stir in the cream at this stage. Heat the soup gently over low heat for another 5 minutes, making sure not to let it boil.

6. Adjust Seasoning and Serve

Taste the soup and adjust seasoning with salt and pepper. Ladle the soup into bowls and garnish with fresh parsley or chives for a burst of color and flavor.
