Description

Jamie Oliver’s Carrot and Celery Soup is a simple, wholesome dish made with fresh carrots, celery, onions, and garlic. The vegetables are simmered in a flavorful broth and blended into a smooth and creamy soup, making it both light and satisfying.

  • 4 large carrots (peeled and chopped)
  • 4 celery stalks (chopped)
  • 1 large onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tablespoon olive oil
  • 1 liter vegetable or chicken stock
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • Optional: A squeeze of lemon juice for added brightness

Instructions

Step 1: Prepare the Vegetables

Wash and chop the carrots, celery, and onion. Mince the garlic. Set the vegetables aside.

Step 2: Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes until softened and fragrant.

Step 3: Add the Carrots and Celery

Add the chopped carrots and celery to the pot and stir well. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.

Step 4: Add the Stock and Simmer

Pour in the vegetable or chicken stock, making sure the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the carrots and celery are tender.

Step 5: Blend the Soup

Once the vegetables are tender, remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.

Step 6: Season and Serve

Season the soup with salt and pepper to taste. For added brightness, squeeze a little lemon juice into the soup before serving. Garnish with fresh parsley for a pop of color and flavor. Serve hot with crusty bread or a side salad.
