Description

Jamie Oliver’s Caramelised Onion and Goat’s Cheese Tart is a savory tart featuring golden caramelized onions and tangy goat’s cheese on a puff pastry crust. This versatile tart is perfect for a variety of occasions and is easy to prepare with just a few ingredients.

Ingredients

Scale

  • 1 sheet of ready-made puff pastry
  • 3 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 150g goat’s cheese, crumbled
  • Fresh thyme leaves (optional)
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

Step 1: Prepare the Puff Pastry

Preheat your oven to 200°C (400°F). Roll out the puff pastry onto a lined baking sheet. Using a knife, lightly score a border about 1 inch from the edges, being careful not to cut all the way through. Prick the center of the pastry with a fork to prevent it from puffing too much.

Step 2: Caramelise the Onions

Heat olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Sauté for 15-20 minutes, stirring occasionally, until the onions are soft and golden. Add the brown sugar and balsamic vinegar, and cook for another 5 minutes, until caramelized and fragrant. Remove from heat and let cool slightly.

Step 3: Assemble the Tart

Spread the caramelised onions evenly within the scored border of the puff pastry. Sprinkle the crumbled goat’s cheese over the onions, and season with salt, pepper, and fresh thyme leaves if desired.

Step 4: Brush with Egg Wash

Brush the edges of the puff pastry with the beaten egg to give the crust a golden finish.

Step 5: Bake the Tart

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed, and the goat’s cheese is slightly melted and bubbly.

Step 6: Serve

Remove the tart from the oven and let it cool slightly. Slice and serve warm, either as a main dish or an appetizer.
