Description

Jamie Oliver’s Broccoli and Stilton Soup is a creamy vegetable soup featuring fresh broccoli and crumbled Stilton cheese. The soup is cooked until tender, blended until smooth, and enriched with the tangy flavors of blue cheese, making it a satisfying and flavorful dish.

  • 1 large head of broccoli, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large potato, peeled and diced
  • 1-liter vegetable or chicken stock
  • 150g Stilton cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chives or parsley, chopped (optional, for garnish)

Instructions

Step 1: Sauté the Onion and Garlic

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Step 2: Add the Broccoli and Potato

Add the chopped broccoli and diced potato to the pot. Stir to combine with the onion and garlic mixture.

Step 3: Pour in the Stock

Pour in the vegetable or chicken stock, making sure the vegetables are just covered. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the broccoli and potato are tender.

Step 4: Blend the Soup

Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.

Step 5: Add Stilton Cheese

Stir in the crumbled Stilton cheese, allowing it to melt into the soup. Taste and adjust seasoning with salt and pepper as needed.

Step 6: Serve

Ladle the soup into bowls and garnish with fresh chives or parsley if desired. Serve warm with crusty bread on the side.
