Jamie Oliver’s Bread Sauce is a creamy, savory sauce made by infusing milk with onions, cloves, and bay leaves, then thickening it with breadcrumbs. The result is a smooth and flavorful sauce that pairs perfectly with roasted poultry or game meats. It’s a simple yet flavorful addition to any roast dinner.
Ingredients
- 500ml (2 cups) whole milk
- 1 onion, peeled and halved
- 6 whole cloves
- 2 bay leaves
- 75g (3 oz) fresh white breadcrumbs
- 50g (2 oz) butter
- Salt and pepper to taste
- Grated nutmeg (optional, for garnish)
- 50ml (1/4 cup) double cream (optional, for extra richness)
Instructions
Pour the milk into a saucepan and add the halved onion, cloves, and bay leaves. Slowly bring the milk to a gentle simmer over medium-low heat. Once it reaches a simmer, remove the saucepan from the heat and let the milk infuse for 15-20 minutes. This will allow the flavors from the onion, cloves, and bay leaves to develop.
After the milk has infused, strain it into a clean bowl or pan to remove the onion, cloves, and bay leaves. Return the milk to the saucepan.
Stir the fresh breadcrumbs into the infused milk. Place the pan back on low heat and allow the breadcrumbs to soak up the milk and thicken the sauce. Stir occasionally, and cook for about 10 minutes until the sauce reaches a smooth, creamy consistency.
Add the butter to the sauce and stir until melted. If you prefer a richer sauce, stir in the double cream at this stage. Continue stirring until the sauce is fully combined and smooth.
Taste the bread sauce and season with salt and pepper to your liking. You can also add a pinch of freshly grated nutmeg for extra flavor. Serve the sauce warm alongside roast chicken, turkey, or any of your favorite roast meats.
