- 500g beef fillet or sirloin, sliced into thin strips
- Salt and freshly ground black pepper, to taste
- 1 large onion, thinly sliced
- 2 garlic cloves, minced
- 250g mushrooms, sliced (e.g., chestnut or button mushrooms)
- 1 tablespoon Dijon or whole-grain mustard
- 150ml beef stock
- 100ml sour cream
- 1 tablespoon chopped fresh parsley (optional, for garnish)
- Rice, pasta, or mashed potatoes for serving
Instructions
1. Prepare the Beef

- Season the beef strips with salt and freshly ground black pepper. Set aside while you prepare the other ingredients.
2. Sear the Beef

- In a large skillet or frying pan, heat 1 tablespoon of olive oil or butter over medium-high heat. Add the beef strips in a single layer, searing for about 1-2 minutes on each side until browned. Remove the beef from the pan and set aside.
3. Cook the Onions and Mushrooms

- In the same pan, add the remaining tablespoon of olive oil or butter. Add the sliced onion and cook for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are golden and the onions are fully tender.
4. Add the Mustard and Stock

- Stir in the mustard, mixing well to coat the mushrooms and onions. Pour in the beef stock and let it simmer for 2-3 minutes, allowing the flavors to meld.
5. Add the Sour Cream and Beef

- Reduce the heat to low and stir in the sour cream, mixing until the sauce is smooth and creamy. Return the seared beef to the pan, stirring to coat the beef in the sauce. Simmer gently for 2-3 minutes until the beef is warmed through but not overcooked.
6. Serve

- Spoon the beef stroganoff over rice, pasta, or mashed potatoes, garnishing with chopped fresh parsley if desired.
