Ingredients
- 1.5 kg (about 3 lbs) beef roast (topside or sirloin)
- 2 tablespoons olive oil
- 3–4 cloves garlic, sliced
- Fresh rosemary and thyme sprigs
- Salt and pepper to taste
- 1 large onion, sliced
- 2 large carrots, cut into chunks
- 1 cup beef broth for gravy)
Instructions
Preheat your oven to 200°C (400°F). Place a roasting tray in the oven to heat up as well.
Rub the beef roast all over with olive oil, salt, and pepper. Make small incisions in the roast and insert slices of garlic and sprigs of rosemary and thyme into each cut for extra flavor.
In a hot skillet over medium-high heat, sear the beef on all sides until it’s golden brown. This helps lock in the juices and adds a rich, caramelized flavor.
Place the sliced onions and carrots in the hot roasting tray, and lay the seared beef on top. Roast in the preheated oven for 1 hour for medium-rare (adjust cooking time based on desired doneness and roast size).
Once the beef is cooked to your liking, remove it from the oven, cover it with foil, and let it rest for 15-20 minutes. Resting allows the juices to redistribute, making the meat more tender and flavorful.
Place the roasting tray with the vegetables on the stovetop over medium heat. Add the beef broth, scraping up any caramelized bits from the bottom of the tray. Let the mixture simmer until it reduces into a rich, flavorful gravy. Strain the gravy before serving, if desired.
Slice the beef thinly and serve with the roasted vegetables and gravy on the side.
