Instructions
Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease the cups to prevent sticking.
In a large mixing bowl, mash the bananas until smooth. You can use a fork or a potato masher to achieve a slightly chunky texture.
Add the melted butter, caster sugar, egg, and vanilla extract to the mashed bananas. Stir until well combined and smooth.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Mix gently to distribute the ingredients evenly.
Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Avoid overmixing, as this can make the muffins dense. If desired, fold in chocolate chips or chopped nuts.
Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full to allow for rising.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown.
