For the Pastry:

Instructions
Step 1: Make the Pastry

- Rub the butter into the flour: In a large mixing bowl, add the flour and butter. Rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.

- Add sugar and egg yolk: Stir in the caster sugar. Then, add the egg yolk and 2-3 tablespoons of cold water, mixing until the dough comes together. If needed, add more water, but do not overwork the dough.

- Chill the dough: Shape the dough into a ball, wrap it in cling film, and refrigerate for at least 30 minutes.
Step 2: Prepare the Filling

- Peel and slice the apples: Peel, core, and slice the apples. Place them in a large bowl and toss with lemon juice to prevent browning.

- Add sugar and spices: Mix the sliced apples with the caster sugar and ground cinnamon. If the apples are juicy, sprinkle with 1 tablespoon of flour to help thicken the filling.
Step 3: Assemble the Pie

- Preheat the oven: Preheat your oven to 190°C (375°F).

- Roll out the pastry: Divide the chilled dough into two portions. Roll out one portion on a lightly floured surface to fit a 9-inch pie dish. Line the pie dish with the rolled pastry, pressing it into the corners.

- Add the apple filling: Spoon the apple mixture into the pie dish, spreading it evenly.

- Top with the second layer of pastry: Roll out the second portion of dough and place it over the apples. Trim the excess pastry, then crimp the edges to seal the pie. Cut a few small slits in the top to allow steam to escape.

Step 4: Bake the Pie
