For the Pastry:

    • 250g plain flour

    • 125g cold unsalted butter (cubed)

    • 2 tablespoons caster sugar

    • 1 large egg yolk

    • 23 tablespoons cold water

For the Filling:

    • 6 large apples (Granny Smith or Bramley, peeled, cored, and sliced)

    • 100g caster sugar

    • 1 tablespoon ground cinnamon

    • 1 tablespoon lemon juice

    • 1 tablespoon plain flour (optional, for thickening)

For Assembly:

    • 1 egg (beaten, for egg wash)

    • 2 tablespoons granulated sugar (for sprinkling on top)


Instructions

Step 1: Make the Pastry

    1. Rub the butter into the flour: In a large mixing bowl, add the flour and butter. Rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.

    1. Add sugar and egg yolk: Stir in the caster sugar. Then, add the egg yolk and 2-3 tablespoons of cold water, mixing until the dough comes together. If needed, add more water, but do not overwork the dough.

    1. Chill the dough: Shape the dough into a ball, wrap it in cling film, and refrigerate for at least 30 minutes.

Step 2: Prepare the Filling

    1. Peel and slice the apples: Peel, core, and slice the apples. Place them in a large bowl and toss with lemon juice to prevent browning.

    1. Add sugar and spices: Mix the sliced apples with the caster sugar and ground cinnamon. If the apples are juicy, sprinkle with 1 tablespoon of flour to help thicken the filling.

Step 3: Assemble the Pie

    1. Preheat the oven: Preheat your oven to 190°C (375°F).

    1. Roll out the pastry: Divide the chilled dough into two portions. Roll out one portion on a lightly floured surface to fit a 9-inch pie dish. Line the pie dish with the rolled pastry, pressing it into the corners.

    1. Add the apple filling: Spoon the apple mixture into the pie dish, spreading it evenly.

    1. Top with the second layer of pastry: Roll out the second portion of dough and place it over the apples. Trim the excess pastry, then crimp the edges to seal the pie. Cut a few small slits in the top to allow steam to escape.

    1. Egg wash and sugar: Brush the top of the pie with the beaten egg and sprinkle with granulated sugar.

Step 4: Bake the Pie

    1. Bake the pie: Place the pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
