Jamie Oliver’s Apple and Rhubarb Crumble is a classic dessert that combines fresh apples and rhubarb with a buttery crumble topping. This dessert is baked until golden and bubbly, making it a warm, comforting treat perfect for any occasion.
Ingredients
For the Filling
- 4 large apples (Granny Smith or Bramley work well), peeled, cored, and sliced
- 300g rhubarb, trimmed and cut into 1-inch pieces
- 100g caster sugar
- 1 teaspoon vanilla extract
- Zest and juice of 1 orange
For the Crumble Topping
- 150g plain flour
- 100g cold unsalted butter, cubed
- 75g light brown sugar
- 50g rolled oats
- A pinch of salt
Instructions
Preheat your oven to 180°C (350°F).
In a large mixing bowl, combine the apple slices, rhubarb pieces, caster sugar, vanilla extract, and orange zest, and juice. Toss everything together until the fruit is well-coated, then transfer the mixture to a baking dish.
In another mixing bowl, add the flour, cold butter, light brown sugar, oats, and a pinch of salt. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. The mixture should be crumbly with small lumps.
Sprinkle the crumble topping evenly over the fruit filling, covering it completely for a nice, thick crust.
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the crumble is golden brown and the fruit filling is bubbling around the edges.
Allow the crumble to cool slightly before serving. Serve warm with custard, vanilla ice cream, or a dollop of cream.
