    • 1 red bell pepper, chopped

    • 1 yellow bell pepper, chopped

    • 1 zucchini, sliced into rounds

    • 1 red onion, cut into wedges

    • 1 carrot, sliced into rounds

    • 1 cup cherry tomatoes

    • 2 tablespoons olive oil

    • 1 teaspoon dried rosemary or thyme

    • Salt and black pepper, to taste

    • Fresh parsley, chopped, for garnish (optional)


Instructions

Step 1: Prepare the Vegetables

Wash and chop all the vegetables into similar-sized pieces to ensure even cooking. Pat them dry with a paper towel to remove excess moisture, which helps them roast better in the air fryer.

Step 2: Season the Vegetables

In a large mixing bowl, combine the chopped vegetables. Drizzle with olive oil and sprinkle with dried rosemary or thyme, salt, and black pepper. Toss well to coat all the vegetables evenly with the seasoning.

Step 3: Preheat the Air Fryer

Preheat your air fryer to 200°C (400°F) for about 3-5 minutes.

Step 4: Air Fry the Vegetables

Place the seasoned vegetables in the air fryer basket in a single layer. You may need to cook them in batches if your air fryer is small. Roast the vegetables at 200°C (400°F) for 12-15 minutes, shaking the basket halfway through to ensure even cooking. The vegetables are done when they are crispy on the edges and tender inside.

Step 5: Serve

Transfer the roasted vegetables to a serving dish and garnish with fresh parsley if desired. Serve warm as a side dish with your favorite main course.
