Ingredients

    • amb Shoulder (boneless, cut into chunks): 600g (about 1.3 lbs)

    • Carrots: 3 large, peeled and chopped

    • Onions: 2 medium, roughly chopped

    • Fresh Rosemary: 4 sprigs

    • Beef or Lamb Stock: 1 liter (4 cups)


Instructions

Step 1: Sauté the Onions

    • Heat Olive Oil: In a large pan, heat a tablespoon of olive oil over medium heat.

    • Cook the Onions: Add the chopped onions and cook for 4-5 minutes until softened and slightly golden.

Step 2: Brown the Lamb

    • Add the Lamb: Stir in the chunks of lamb shoulder, seasoning them with salt and pepper. Brown the lamb on all sides, about 5-6 minutes, to develop a rich flavor.

Step 3: Add the Carrots and Rosemary

    • Stir in the Carrots and Rosemary: Add the chopped carrots and sprigs of fresh rosemary to the pot, stirring to combine. Cook for another 2-3 minutes to let the flavors meld.

Step 4: Add the Stock

    • Pour in the Stock: Pour the beef or lamb stock over the ingredients, ensuring everything is covered. Bring the stew to a simmer.

Step 5: Slow Cook the Stew

    • Simmer and Cook: Cover the pot and let the stew simmer on low heat for 2-2.5 hours. Alternatively, transfer to a slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the lamb is tender and the flavors are well combined.

Step 6: Serve
