Ingredients
- 4 boneless, skinless chicken breasts
- 200g curry paste (choose your favorite, such as tikka masala or korma)
- 1 can (400ml) coconut milk
- 2 fresh tomatoes
- 1 bunch of fresh coriander (cilantro)
Instructions
Heat a splash of oil in a large pan over medium heat. Season the chicken breasts with salt and pepper, then sear them for 5-6 minutes on each side until they are golden brown but not fully cooked through. Remove the chicken and set aside.
In the same pan, add the curry paste and cook it for 1-2 minutes, stirring constantly. This helps to release the flavors and intensify the taste of the paste.
Pour in the coconut milk and stir it into the curry paste. Chop the fresh tomatoes and add them to the pan, mixing them in to create a rich, creamy sauce. Let it simmer for a couple of minutes.
Return the chicken breasts to the pan, nestling them into the sauce. Cover and simmer for about 10-12 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.
Chop the fresh coriander and sprinkle it generously over the curry just before serving. Serve the curry hot with your favorite side dishes.
