Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (400g) chickpeas, drained and rinsed
- 1 jar (300g) roasted red peppers, drained
- 1 lemon
- 1 bunch of fresh parsley
Instructions
Season the chicken breasts with salt and pepper on both sides. Heat a large pan over medium heat with a splash of olive oil. Place the chicken breasts in the pan and cook for 6-8 minutes on each side until golden brown and cooked through.
Once the chicken is nearly cooked, add the drained chickpeas to the pan. Stir the chickpeas around the chicken, allowing them to soak up the juices from the chicken.
Add the roasted red peppers to the pan, cutting them into strips if necessary. Stir everything together, letting the peppers heat through and infuse the dish with flavor.
Squeeze the juice of one lemon over the chicken and chickpea mixture. Roughly chop the fresh parsley and sprinkle it over the dish for a burst of color and freshness.
Once everything is cooked and well combined, remove from heat. Serve the chicken breasts on a bed of chickpeas and red peppers, garnished with extra parsley if desired.
