  • 2 large carrots, peeled and sliced
  • 1 leek, cleaned and sliced
  • 1 liter (4 cups) chicken broth or stock

Instructions

Step 1. Prepare the Ingredients

Start by preparing your vegetables. Peel and slice the carrots into thin rounds. Clean the leek thoroughly to remove any grit, and slice it into thin rings. Set the vegetables aside.

Step 2. Cook the Chicken

In a large pot, add the chicken breasts and cover them with the chicken broth. Bring the broth to a simmer over medium heat. Let the chicken simmer for 15-20 minutes, or until it is cooked through and tender. You can check if the chicken is done by ensuring the internal temperature reaches 75°C (165°F).

Step 3. Add the Vegetables

Once the chicken is cooked, remove it from the pot and set it aside to cool slightly. Add the sliced carrots and leek to the pot with the chicken broth. Let the vegetables simmer for 8-10 minutes until they are tender but still have a slight bite.

Step 4. Shred the Chicken

While the vegetables are cooking, shred the cooked chicken using two forks. You can shred it finely or leave larger chunks, depending on your preference.

Step 5. Return the Chicken to the Soup

Once the vegetables are tender, return the shredded chicken to the pot. Stir everything together and let it heat through for another 2-3 minutes. Taste the soup and adjust the seasoning with salt and pepper if needed.

Step 6. Serve
