Description
Jamie Oliver’s 5 Ingredients Chicken Pasta is a no-fuss dish made with chicken, pasta, cherry tomatoes, fresh basil, and Parmesan cheese. These five simple ingredients come together to create a flavorful and satisfying meal that’s perfect for busy days or when you want to keep things simple but delicious.
Ingredients
- 2 boneless, skinless chicken breasts
- 300g (10.5 oz) pasta (penne, fusilli, or your choice)
- 200g (7 oz) cherry tomatoes, halved
- 1 handful fresh basil leaves
- 50g (1/2 cup) Parmesan cheese, finely grated
Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta.
While the pasta is cooking, heat a little olive oil in a large pan over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Cook for 6-8 minutes on each side until golden brown and cooked through. Once done, remove the chicken from the pan and let it rest for a couple of minutes before slicing it into thin strips.
In the same pan, add the halved cherry tomatoes. Cook for about 3-4 minutes until the tomatoes begin to soften and release their juices. Stir occasionally to help them break down and create a light sauce.
Add the cooked pasta to the pan with the tomatoes. Toss everything together, adding a splash of the reserved pasta water to create a silky sauce. Stir in the sliced chicken and allow everything to combine for 1-2 minutes.
Turn off the heat and toss the fresh basil leaves through the pasta. Sprinkle the grated Parmesan over the top and give it a final toss to mix. If the pasta seems too dry, add a little more of the reserved pasta water until you reach your desired consistency.
